Here is what you will need:
1/4 cup of olive oil
1 large onion
2 cloves of garlic
1 Lb. of chourico( portuguese sausage) or chorizo ( mexican sausage)
1 lb. of stew beef can be added also. This adds flavor to the dish
6 or so medium potatoes
1 lb. of kale or collard greens ( kale sometimes comes in cans)
Cold water to cover ( beef or chicken stock is also very good)
You can also include beans of some kind I use Navy beans
Salt and pepper ( to taste)
Some people use gravy browning ( this adds color also )
Here we go;
Fry onion,garlic, and chourico or chorizo in the olive oil( this brings out the flavor and color)
Add potatoes, kale or collards
Cover with water or stock
Salt and pepper
Add gravy browning if you like
Cook until potatoes and kale are soft ( not to long potatoes turn to mush)
Add beans at the end they need just to be heated.
Serve with hard crusty bread ( I can taste it right now)
Should serve 6 to 8 but it depends on how hungry you are.
